A-Z muffins – a state-side taken on using up courgettes and apples

This recipe hails from school days in the US, when as an awkward little English girl with a weirdo accent (thanks, school mates!), I first learned what a zucchini is.  A-Z stands for ‘apple to zucchini’, which is cooler than A-C over here. Sounds too much like grades. So I still call these A-Z muffins, and yes, that is ‘zeee’, not ‘zed’.

We made these in class aged 9, and they’re great to do with small people – but make sure no-one adds any grated fingers to the mix, as it kills the cupcake experience.

What you need

  • 3 eggs
  • 2 cups / 450g sugar
  • 1 cup / 240ml of vegetable oil
  • 1 cup / 150g of apples, grated (and peeled if you want to, though not necessary)
  • 1 cup / 150g of grated courgette
  • 2 cups / 300g of self-raising flour
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 tsp vanilla essence
  • 1 cup /200g of chopped nuts e.g. walnuts/pecans

What to do

  • Preheat the over to 180°C/Gas Mark 4
  • Beat the eggs until light, and gradually add sugar and mix
  • Grate apples and courgettes, and stir into egg/sugar mixture
  • Mix the flour and salt, and fold into the egg/sugar mixture
  • Stir in the vanilla and chopped nuts
  • Fill each cupcake tray 2/3 full and pop in over
  • Cook for 35-40 minutes until knife comes out
