The idea of massaging kale sounds rather silly but in practice, as my friend showed me very kindly last week, all a massaged kale salad involves is olive oil, salt, Cultivate’s curly kale (which is in abundance this season) and then any other salady items you wish to add. Massaging the olive oil and salt into the kale softens and wilts the leaves, allowing the kale to become palatable raw. You might wish to remove the bigger sections of stalk if you want a really easy to chew salad.
This is such an easy method and allows you to create a fresh, healthy salad out of a vegetable that is usually available all winter and throughout the Hungry Gap. Enjoy!
